Lentil Soup with Vegetables
Ingredients:
- 1 Cup of Lentils
- 2 cloves of garlic
- 50ml of Trascastillo Olive Oil
- 2 Carrots
- 1 onion
- 1 teaspoon dried thyme
- 1 teaspoon fresh rosemary
- 1 bay leaf
- Parsley to taste
- Salt and pepper
1.- Wash the lentils and drain them.
2.- In a large frying pan, heat the olive oil over medium heat. Add the chopped onion and small diced carrots, and sauté until tender, about 5 minutes.
3.- Add the minced garlic and cook for 1 minute until fragrant.
4.- Add the cooked lentils to the pan and mix well.
5.- Add the bay leaf, thyme and rosemary. Stir so that the lentils are infused with the flavors.
6.- In a pot, boil the lentils in 2 cups of water until they are tender but still firm to the bite, approximately 20-25 minutes. Add the vegetables and boil for 5-7 minutes, allowing the lentils to mix with the vegetables and herbs.
7.- Season with salt and pepper to taste. Garnish with fresh chopped parsley before serving.
