Spaghetti with Agli Oli (garlic and oil)

Ingredients for 3-4 servings:
  • 4 or 5 cloves of garlic
  • 250 g of spaghetti or the pasta of your choice
  • 65 ml Trascastillo olive oil
  • Parmesan cheese to taste
  • Fresh parsley
  • Salt and pepper
  1. Cook the pasta al dente following package instructions. Don't forget to reserve a little cooking water before draining. 😉
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. 🍳 Add the minced garlic to the pan. Cook until the garlic is fragrant, but not browned. You can add guajillo chili flakes to give it a slightly spicy flavor.
  3. The magic begins! Add the cooked pasta to the pan with the garlic and mix well so that each strand is infused with the delicious flavor of the oil and garlic. If the pasta seems a little dry, stir in a little of the reserved cooking water for a light, delicious sauce. 🚰
  4. Season with salt and pepper to taste. Don't forget the final touch: sprinkle with fresh chopped parsley. 🌿
  5. If you want, you can add some type of cooked protein in the last step.
